Ingredients

  • For the Cake Layer:
  • 1 cup all-purpose flour

  • 1 cup strong brewed coffee cooled

  • For the Cream Layer:
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • For the Dulce de Leche Layer:
  • 1 cup dulce de leche
  • Additional:
  • Cocoa powder for dusting
  • Chocolate shavings for garnish

Instructions

  • Prepare the Cake Layer:
  • Preheat the oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
  • Sift together flour, baking powder, and salt. Set aside.
  • Beat egg yolks with 1/2 cup sugar until light and fluffy. Stir in milk and vanilla.
  • In another bowl, beat egg whites until soft peaks form. Gradually add the remaining 1/2 cup sugar and beat until stiff peaks form.
  • Fold the egg whites into the yolk mixture. Gently fold in the dry ingredients until just combined.
  • Pour batter into prepared pan and bake for 20-25 minutes. Let cool, then cut into circles to fit your serving cups.
  • Assemble the Despacito Cups:
  • Mix the brewed coffee and coffee liqueur in a shallow dish.
  • Dip each cake circle into the coffee mixture briefly and place one at the bottom of each serving cup.
  • Spread a layer of dulce de leche over the cake.
  • Whip the heavy cream with powdered sugar and vanilla until stiff peaks form. Spoon or pipe a layer of cream over the dulce de leche.
  • Repeat the layers until the cups are filled, ending with a cream layer.
  • Refrigerate for at least 1 hour or until set.
  • Serve:
  • Before serving, dust with cocoa powder and garnish with chocolate shavings.

Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 cup 2 sticks unsalted butter, cold and cut into small pieces
  • 1/4 to 1/2 cup ice water
  • For the Filling:
  • 6 to 8 large apples a mix of Granny Smith and Honeycrisp is ideal, peeled, cored, and sliced
  • 3/4 cup sugar
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 2 tablespoons unsalted butter cut into small pieces
  • 1 egg yolk beaten with 1 tablespoon water (for egg wash)
  • Additional sugar for sprinkling on top

Instructions

  • Prepare the Pie Crust:
  • In a large bowl, combine flour, salt, and sugar. Add butter and mix until the mixture resembles coarse crumbs.
  • Gradually add ice water, stirring until the dough just comes together. Divide into two halves, form into discs, wrap in plastic, and chill for at least 1 hour.
  • Prepare the Filling:
  • In a large bowl, toss the apple slices with sugar, flour, cinnamon, nutmeg, and salt.
  • Assemble the Pie:
  • Preheat oven to 425°F (220°C).
  • On a lightly floured surface, roll out one disc of dough to fit a 9-inch pie dish. Place the dough in the dish, and fill with the apple mixture. Dot with pieces of butter.
  • Roll out the second disc of dough and place over the filling. Trim, seal, and crimp the edges. Cut slits in the top to allow steam to escape.
  • Brush the crust with the egg wash and sprinkle with sugar.
  • Bake in the preheated oven for 15 minutes. Reduce the temperature to 350°F (175°C) and continue baking for 45 to 50 minutes, or until the crust is golden brown and the filling is bubbling.
  • Cool on a wire rack before serving.
